For every stage of your workflow, you should identify biological, chemical and physical hazards and assess their risks. Define clear control points (e.g. incoming goods temperature, cooking process, hot/cold holding) and establish measurable critical limits.
Create short, image-based work instructions (e.g., checklists with pictograms) and link them directly to corrective actions. Use simple do/don’t lists for hygiene requirements. Especially useful: Colour-coded work equipment helps prevent cross-contamination.
Use digital temperature logs and daily checklists for cleaning, staff hygiene and incoming goods.
