How does the Testo frying oil measuring device work?
Measure frying oil reliably with the testo 270 BT
It’s not possible to reliably judge the quality of frying oil by sight or smell alone. With the testo 270 BT frying oil tester, operators only need to change the oil once the critical TPM limit values are reached. This prevents unnecessary oil changes and associated costs, while ensuring consistently high food quality.
By connecting to the testo Smart App, the entire process becomes even simpler and more secure — including fully digital, paperless documentation.
Once the fried food and any remaining food particles have been removed from the fryer, wait until no more bubbles rise from the oil. This indicates that all water has evaporated and ensures an accurate measurement. Water and food residue would otherwise distort the reading.
The optimal immersion depth is between the min and max markings on the sensor — similar to checking the oil level in a car. Maintain at least 1 cm distance between the sensor and the fryer’s metal components. Move the sensor slowly in small circular motions while measuring, as used cooking oil is not homogeneous.
When using the testo 270 BT in Auto-Hold mode, the display flashes during measurement. Once the flashing stops, the reading is stable and the device shows both the TPM value (Total Polar Materials) and the oil temperature. The app-guided frying oil measurement program provides optimal support throughout the process, but measurements can also be performed manually without the app.
The color-coded display makes interpretation simple:
Green (< 20% TPM): Oil is in good condition
Orange (20–24% TPM): Oil is still usable, but plan to change or filter it soon
Red (> 24% TPM): Oil must be replaced
For reference, frying oil performs at its best between 14% and 20% TPM — safe, flavorful, and reliable.
With the testo 270 BT, you can set your own TPM limit values and protect critical device settings with a PIN to prevent accidental or unauthorized changes.
Testing frying oil correctly
Compared to traditional frying oil test strips, using a digital frying oil tester offers significant advantages. Test strips rely on a dye that changes color when it comes into contact with oil. The result is then compared against a reference chart to assess oil quality. However, test strips measure free fatty acids — a value that can fluctuate during frying — and therefore require careful interpretation.
In contrast, the testo 270 BT provides a more accurate and consistent assessment of frying oil quality. Its ergonomic design ensures a secure grip and protects you from direct contact with hot oil. The device also enables direct measurement in hot oil between 40 and 200 °C, allowing you to evaluate both TPM (Total Polar Materials) and oil temperature at the same time.
