Bacteria grow fastest in the so-called “danger zone” (typically 5 – 57 °C / 41 – 135 °F). Proper temperature control during transport, storage and preparation is therefore essential to prevent health risks.
Always store raw meat and poultry below cooked or ready-to-eat products. Separate preparation areas for raw and ready-to-eat foods and use designated, colour-coded utensils. Clean and sanitize surfaces regularly.
Safety starts with procurement. Only accept products from approved suppliers who meet recognized standards. Check the temperature and integrity of packaging upon receipt. When storing, follow the FIFO principle: First In, First Out.
